We made it through the last week of August and (for most) the first week back to school and routine. Were there tears of joy on the first day? Or tears of “my babies are growing up too fast!?” Haha, probably both! For us, it means SCHOOL TRAFFIC everywhere. Like whoa! Totally forgot about that.
Okay, speaking of school and routine, I’m going to finish up this back to school “theme” and easy gluten free meal “routines” for the week. Remember, we started off with this delicious easy casserole, rolled on through the week with an effortless crock pot shrimp dish, and now we must take all out leftovers and do something tasty (yet resourceful) to finish off the week.
Which leads me to this recipe round and concept. I know, I know, I say that phrase a lot, but it’s true. My whole concept of an intro is to cleverly reveal the recipe. Is it working? Haha.
But this round up… IT’S Fab! Why? Because it’s a crowd pleaser. Like the paleo crowd, kid crowd, pizza loving crowd, breakfast crowd, and the vegan crowd. You get my point…

I’m going to stop right there and just get to all the recipe. Besides, my brain only works till about 8pm on Thursdays, then creeps a slow school zone speed of 20mph until Monday. I know you can relate.

Surf and Turf Flatbread on gluten free thin crust.
 Quick, go look in your fridge. Do you have leftover cooked veggies, meat, or fish? Then you can make this. All you need is a gluten free pizza crust or even naan bread! Super easy, quick, and healthy!
This flatbread is topped with our leftover beef tips ( via 5280 meat) and sizzlefish Salmon. Now I’m wanting it again. Gah… soo good!

- Total Time: 15 minutes

Description
Surf and Turf Flatbread
Ingredients
- One 8 in pizza crust (or naan bread works too)
- ¼ cup creamy dressing or ranch
- Black pepper
- Olive oil.
- seasoning of choice for carrots
- 2 oz sliced beef (cooked)
- 2–3 oz leftover salmon cooked
- ¼ cup sliced carrots.
- Optional topping – provolone cheese (1 oz)
Instructions
- Sautee your carrots in 1 teaspoon olive oil and seasoning. set aside.
- Bake 8 inch pizza crust (thin) for about 10 minutes or until lightly brown. Spread ranch all over the crust once it’s done toasting. Then add on veggies, rest of olive oil, beef, and salmon on top. Add cheese on top if desired. Place in oven again for a few minutes until warmed and crust is browned even more. Add a dash of pepper once done to finish seasoning.

Cinnamon Raisin Flat Bread (Paleo)
I love Arman’s sweet flat bread recipes because it makes a great Brinner (breakfast and dinner)! You know, when all you have left in the pantry and/or fridge are eggs, bacon, and fruit?  Yep, flatbread with eggs/bacon and whatever veggies/fruit you have left. Dinner is served. I mean BRINNER!
Pizza Flatbread Recipe  (Vegetarian)
I love how simple Jen’s pizza flatbread is. And she used NAAN! Yay! All you need are veggies (even frozen will work) and cheese. Bam! Your Friday night Pizza dinner is ready!
Flatbread for One (Vegan)
Have you ever tried socca? If not,you must! It’s super easy and a great flour for flatbread. It’s made from chickpeas! Amanda’s Socca Flatbread for one is awesome for when you need just lunch or dinner for one! Take all your leftover veggies and throw them on top! She used massaged kale, olives, and sun dried tomato. To me, that screams –> Pour some wine with this! Am I right? YUM!
Fall Flavor Flatbread (Gluten Free and Grain Free)
Yes I know, it’s not Fall yet but it’s close. And Gina’s Apple, Delicata & Blue Cheese Flatbread makes me want to jump forward to September ASAP! What I love about this dish is that you can probably use a similar squash. So if you don’t have delicata yet, try summer squash or zucchini. I bet you have some leftover somewhere, yes?
Spice it up and Fill it up FlatbreadÂ
Okay, so what if you already have flatbread but you need a good filling to go in it. This is where Taylor’s recipe comes in handy! You can definitely use leftovers. I know a lot of you must have cauliflower somewhere in the freezer or already cooked. Just chop or grind it up with a little cabbage salad, and use Tamari sauce versus soy to make it Gluten free! I bet this would great on naan bread or your favorite gluten free tortilla too!

You know I totally have a weakness for flatbread. In my mind, flatbread>pizza because of the texture, ratios, and all of the fun things that go on top (I feel like people have more fun with them). Also, puff pastry is totally worthless nutritionally, but it is magical for a base.
