- 1/3 to 1/2 cup packed spinach leaves
- 1/2 Tablespoon melted unrefined coconut oil (see notes for substitutes)
- 1 green apple, core removed
- 8 to 10 ounces fresh orange juice
- 2–3 mint leaves
- 1/2 lemon, juiced
- Handful ice or purified water, if needed (see notes)
- Optional natural sweetener – 3-4 pitted dates, banana, maple syrup or honey
Instructions
- In a small microwave-safe bowl, combine spinach leaves and coconut oil. Steam in the microwave for 15-20 seconds. Set aside to cool.
- In a blender, add the apple, orange juice, mint leaves, lemon juice and spinach with coconut oil. Blend until smooth.
- Add more juice or water to thin out the smoothie or a handful of ice to thicken it. To sweeten the smoothie, blend in natural sweetener options.
- Serve immediately or store in the fridge in an airtight container for up to 3 days.
Notes
Substitutes – Avocado, almond butter, or tahini may be substituted for the coconut oil. To reduce the natural sugar content, simply add 4-8 ounces water to the smoothie before blending. Adjust to taste. This will make 2 smaller smoothies.
