  • 1 cup Chickpea Flour
  • 1/2 cup GF Flour
  • 1 oz freeze dried fruit
  • 1/4 cup GF muesli
  • 30 grams Vanilla Protein
  • 1 egg
  • 1/2 cup water
  • dash of milk
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/4 tsp almond extract
  • optional sweetener of choice (honey, stevia, etc)

  2. Preheat oven to 375F or 200 C. Combine dry ingredients, mix well. Add in egg, water, milk, and remaining ingredients. Beat well until smooth (besides the dried fruit mix). Coat a muffin pan then scoop the batter into each cup. Bake for 15 minutes or until middle of the muffin has baked all the way through. Enjoy with favorite topping; peanut butter, jam, butter, etc.
  3. Okay so 200C is really 392F but I think 375F will work better. Or at least I hope. Math is not really my forte.
