Ingredients
- 1/2 cup maple syrup
- 1/4 to 1/3 cup coconut sugar or brown sugar
- 1/4 cup pure bourbon whiskey
- 1 Tablespoon orange juice or 1 teaspoon apple cider vinegar
- 1/4 teaspoon ground ginger
- Optional pinch nutmeg
- Kosher salt, to taste
Pork Chops
- 1.5 to 2 lbs (4 to 6 chops) boneless pork chops, 1 inch thick (see notes)
- Kosher salt, divided
- Black pepper
- 1 Tablespoon melted butter or avocado oil for searing
- Fresh thyme to garnish, optional
Instructions
Oven
- Prepare the glaze in a small saucepan. Whisk together the maple syrup, coconut sugar, bourbon, orange juice, ginger, and optional nutmeg over medium heat. Bring to a light boil until the syrup is foamy.
- Reduce the heat to low and simmer, stirring occasionally, for 15 minutes or until the glaze thickens into a thicker consistency (it will thicken as it cools).
- While the sauce is simmering, prep the pork chops.
- Season both sides of the pork chops with salt and pepper. Set aside. Preheat the oven broiler on medium-high heat (500 F).
- Heat oil or butter in an oven-safe pan or skillet (see notes) over medium-high heat. Sear chops on both sides until golden (about 3 to 4 minutes each side for 1 inch thick pork chops. The thicker the pork chops, the longer it will take to sear, up to 5 minutes for 1 1/4 inch pork chops).
- Generously brush both sides of the pork chops with the glaze (reserving 2 Tablespoons glaze for basting). Place the pork chops in the broiler on the center rack for 1 minute. Remove from the oven and baste the pork chops with the remaining sauce. Flip pork chops over and place back in the oven for 1 to 2 more minutes until edges are golden and caramelized. Internal temperature should be at least 140 to 145 F.
- Remove from the oven and let the pork chops rest for 5 minutes before slicing. Season with salt to taste and garnish with fresh thyme, if desired.
- Store leftover pork chops in an airtight container in the fridge for up to 3 days.
Air Fryer
- Preheat the air fryer to 400 degrees.
- Season both sides of the pork chops with salt and pepper.
- Spray the basket with nonstick cooking spray then place the pork chops in a single layer in the air fryer.
- Reserve 2 Tablespoons glaze in a separate dish, then generously brush the pork chops with glaze.
- Cook the pork chops for 10-14 minutes, flipping halfway through and basting the chops with the glaze. The thicker the pork chops, the longer the cooking time. 12 minutes for 1 1/4 inch pork chops. Internal temperature will reach 145 degrees F.
- Let the pork chops rest for 5 minutes before slicing. Serve with reserved glaze, season with salt to taste and garnish with fresh thyme, if desired.
- Store leftover pork chops in an airtight container in the fridge for up to 3 days.
Notes
Ingredient Tip – Pure, distilled bourbon is considered to be gluten-free!
Prep Tips – Transfer the pork chops to an aluminum foil lined pan to broil if you don’t have an oven safe skillet. If the glaze doesn’t thicken after 15 minutes, don’t worry, brush on the pork chops anyways, the sauce will caramelize in the broiler.
Storage Tips – To store in the freezer, double layer each glazed pork chop in waxed paper and store in a ziplock bag or airtight container. Freeze any extra sauce separately to baste the chops when reheating.
