Ingredients

Scale

1 cup each:

  • Radishes, halved (or small beets, chopped or quartered)
  • Broccoli florets
  • Cauliflower florets
  • Brussels sprouts, halved
  • Red onion, cut into 1-inch chunks

Plus:

  • 1 to 1 1/2 tablespoons olive oil

  • 1/2 teaspoon garlic powder (optional)
  • Kosher salt and pepper, to taste
  • Fresh lemon wedges, for serving

Instructions

  1. Preheat the air fryer to 380°F (190°C).
  2. In a large bowl, toss vegetables with olive oil, vinegar, garlic powder, salt, and pepper until evenly coated.
  3. Arrange in a single layer in the air fryer basket. Cook for 14–18 minutes, shaking halfway, until golden and tender.
  4. Drizzle with a squeeze of fresh lemon juice before serving.
  5.  Serve with nightshade-free ranch or your favorite dipping sauce.

Notes

Note: Cooking times may vary depending on your air fryer model.

Tip: Place the cut sides facing down in the basket for the first half of cooking for maximum browning.
