Description

This fresh salsa recipe makes the best fruit salsa you’ll ever taste! A spicy-sweet combination of jalapeño, grapes and cucumbers. Perfect with chips for snacking, or use as a topping on grilled meats, poultry, or fish.


Ingredients

  • 1 medium pickling cucumber, finely diced
  • 1 cup red and green seedless grapes, diced
  • 1 small jalapeño, seeds and membrane removed
  • 1 scallion, minced
  • 1 Tablespoon raw honey or agave
  • 1 Tablespoon fresh cilantro
  • 1 teaspoon dried or 1 Tablespoon fresh parsley or basil
  • 1 lemon or lime, juiced
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Two options: For a smoother restaurant style salsa, use a food processor to combine. Place all ingredients into a food processor and pulse a few times to combine everything. For a thicker salsa, place all finely diced ingredients into a non-reactive bowl (glass, stainless steel, or ceramic) and mix together with a spoon.
  2. Chill the salsa in a non-reactive serving bowl and allow it to chill for at least 30 minutes or up to 12 hours before serving.
  3. Store in the fridge in an airtight container for up to 4 days.
