No Bake Coconut Peanut Butter Butterscotch Bites


Ingredients

Scale
  • 1/2 cup coconut flour
  • 1/2 cup almond meal/flour
  • 1/2 cup coconut shavings (unsweetened)
  • 2 tbsp coconut sugar
  • 2 tbsp butterscotch pudding mix (optional)
  • 1/4 c vanilla protein powder (around 60 grams)
  • 1/3 cup natural peanut butter
  • 1/3 cup honey
  • 1 tsp natural vanilla extract

Instructions

  1. In large bowl, add in all your dry ingredients. Then mix in your nut butter, and last the honey and extracts. Mix well ( I use my hands) and roll into bite size balls. Next, coat the bites with extra protein powder (vanilla) or butterscotch pudding mix if desired
  2. Then return to freezer after. Makes anywhere between 20-22 balls. Freeze or keep in refrigerator to maintain freshness.

Notes

For natural pudding mix use this brand

If you want it even more like candy, feel free to add in crushed butterscotch candy within the mix. It’s definitely not as healthy but it does work! xxoo
