Description
This gluten-free pizza muffins recipe is an easy snack or appetizer made with gluten-free pizza dough mix and your favorite toppings! Dairy-free option.

- Non-stick cooking spray
- 1 package (6.5 ounces or around 200 grams) gluten free pizza dough mix (for a thinner crispier crust use our no yeast pizza crust – see notes)
- 1/3 to 1/2 cup pizza sauce or tomato sauce (If using tomato sauce, mix in 1/4 teaspoon garlic powder and pinch of salt, black pepper, and onion powder.)
- 1/3 cup to 1/2 cup sliced/diced bell peppers or other veggies
- Uncured pepperoni, cooked ground sausage, or diced chicken (optional)
- 1/3 cup to 1/2 cup shredded cheese of choice, or as needed
Instructions
- Prepare the gluten free pizza dough according to directions on that package. Once the dough is ready to use and bake, use a floured rolling pin to roll it out into a 12 x 10 inch rectangle about 1/2 inch thick.
- Chill in the freezer for 10 minutes or in the fridge for 30 minutes.
- While the dough is chilling, Preheat the oven to 425 F and spray a muffin pan with cooking oil. Set aside.
- Remove the dough from the fridge. Using the top of a regular mason jar lid or large round cookie cutter, make a circle in the dough and carefully transfer the dough to the prepared muffin pan, laying it flat. Repeat until you have 10-12 muffin cups filled with dough.
- Spoon 1 Tablespoon of pizza sauce on each muffin cup followed by diced veggies, protein (if using), and cheese.
- Place in the preheated oven on the center rack and bake for 11-14 minutes or until the dough is browned and cheese is melted. Check at 10 minutes for doneness.
- Store leftovers in an airtight container in the fridge for up to 4 days.
Notes
Storage Tips – Freeze in a sealed container for up to 3 months. Thaw in the fridge overnight and reheat in the microwave or oven.
