Description

This gluten-free pizza muffins recipe is an easy snack or appetizer made with gluten-free pizza dough mix and your favorite toppings! Dairy-free option.


Ingredients

Units Scale
  • Non-stick cooking spray
  • 1 package (6.5 ounces or around 200 grams) gluten free pizza dough mix (for a thinner crispier crust use our no yeast pizza crust – see notes)
  • 1/3 to 1/2 cup pizza sauce or tomato sauce (If using tomato sauce, mix in 1/4 teaspoon garlic powder and pinch of salt, black pepper, and onion powder.)
  • 1/3 cup to 1/2 cup sliced/diced bell peppers or other veggies
  • Uncured pepperoni, cooked ground sausage, or diced chicken (optional)
  • 1/3 cup to 1/2 cup shredded cheese of choice, or as needed

Instructions

  1. Prepare the gluten free pizza dough according to directions on that package. Once the dough is ready to use and bake, use a floured rolling pin to roll it out into a 12 x 10 inch rectangle about 1/2 inch thick.

Notes

Storage Tips – Freeze in a sealed container for up to 3 months. Thaw in the fridge overnight and reheat in the microwave or oven. 

Prep Tip – The quantity of pizza muffin bites will differ based on the size of the pizza crust mix package utilized.
