Scale
- 4 limes, divided
- 5 cups water, divided
- 1 cup monk fruit sweetener or sweetener of choice, divided
- 1/4 cup sweetened condensed milk or vegan condensed milk (sweetened or sugar free)
- Mint leaves and lime slices, to garnish
Instructions
- Wash the limes thoroughly by scrubbing the skin with dish soap to remove any pesticides or wax. Slice the limes into quarters.
- Add half the limes to a high speed blender with 1/2 cup sugar and 2 1/2 cups water. Secure the lid on the blender and pulse 5 times.
- Place a fine-mesh strainer over a pitcher or large bowl and pour the blended lime mixture through the strainer. Press the rest of the liquid through the strainer into the bowl or pitcher. Discard the pulp. Repeat with the remaining limes, sugar, and water.
- Pour the strained lime mixture back into the blender and add the condensed milk. Pulse again to blend. Alternatively, pour the strained lime sugar mixture into a larger pitcher, then stir in the condensed milk with a spoon. Add ice and stir again.
- Garnish with mint leaves and extra lime slices, if desired.
- Serve immediately or keep in the fridge (without ice) for up to 1 day.
Notes
Nutrition below based on using vegan condensed milk with raw sugar or agave. There is a sugar free option of my sweetened vegan condensed milk recipe.
