Description

Make these sticky date blended overnight oats for a gluten-free, dairy-free, nutritious breakfast that tastes like sticky toffee pudding! 


Ingredients

Units Scale
  • 1/2 cup gluten-free rolled oats
  • 3/4 to 1 cup water
  • Pinch of salt
  • 1/4 cup nondairy milk or Greek yogurt (see notes)
  • 2 to 3 pitted dates, chopped or soaked for easier blending (about 1/4 cup chopped)
  • 1 to 2 teaspoons honey or maple syrup, optional (see notes)
  • 2 teaspoons chia seeds
  • 2 to 3 tablespoons nondairy milk or creamer, as needed
  • 2 teaspoons creamy almond butter, cashew butter, or other nut or seed butter of choice (see notes)
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Optional Mix-In

  • Protein powder
  • Pinch of cinnamon

Optional Toppings

  • Chopped nuts
  • Additional chopped dates

Instructions

  1. In a small saucepan, add the water and a pinch of salt and bring to a boil.
  2. Stir in the rolled oats, reduce the heat to low, and cook partially covered for about 10 minutes, stirring occasionally, until the oats are soft and creamy. Add a splash of milk or water while cooking if the oats become too thick or dry.
  3. Alternatively, cook the oats in the microwave according to the package directions, adding more milk or water as needed.
  4. Transfer the cooked oats to a blender. Add the nondairy milk or Greek yogurt, dates, and honey or maple syrup, if using.
  5. Blend using an immersion blender, regular blender, or food processor until mostly smooth, leaving a little texture if desired.
  6. Transfer the mixture to a bowl or airtight container. Stir in the chia seeds, nondairy milk or creamer, nut butter, vanilla extract, an additional pinch of salt, and protein powder, if using.
  7. Cover and refrigerate overnight or for at least 4 hours.
  8. Stir before serving, adding an extra splash of milk as needed to reach your desired consistency.Top with chopped nuts, additional dates, and a pinch of cinnamon, if desired.

Notes

  • Dates: Dates add natural sweetness and texture and help the oats keep well. You can substitute 1/2 to 1 banana, but the oats may not stay fresh as long.
  • Honey or maple syrup: The dates naturally sweeten the oats, so additional sweetener is optional. Add 1 to 2 teaspoons of honey or maple syrup for a sweeter, more caramel-like flavor, especially if using tart Greek yogurt or less-sweet dates.
  • Greek yogurt: Use Greek yogurt for a creamier texture and extra protein. Nondairy yogurt may also be used in place of Greek yogurt or almond milk. 
  • Nut butter: Almond or cashew butter works best. Peanut butter and tahini can be overpowering and won’t give the same sticky date flavor.
