Remove giblets and excess fat from chicken. Use paper towel to pat dry, inside and out. Loosen the skin, starting from the breast.
Combine all ingredients for the marinade, whisk. Gently rub marinade on meat of chicken underneath the skin.
Place trivet in Instant Pot and add stock. Add the chicken, breast side up. Stuff cavity with garlic, lemon, and onion. Pour remaining marinade on top of chicken skin around legs.
Pressure cook on high for 24-30 minutes. Allow 15-minutes natural release. Transfer chicken to foil-lined baking sheet and broil chicken for 10-12 minutes to brown the chicken.
