INSTANT POT STEAMED ARTICHOKES WITH AIOLI

GLUTEN-FREE & VEGETARIAN

INGREDIENTS: - artichokes - vegetable broth or water Quick Aioli: - real mayonnaise - fresh herbs (rosemary or oregano) - dijon or honey mustard - lemon juice - garlic - olive oil - crushed red pepper flakes - salt & pepper

1) Trim the outer layer of artichoke by peeling off first layer of leaves. Cut the tip and stem. Rub the tips with a little fresh lemon juice.

2) Place artichokes upside down on a wire trivet in the Instant Pot. 3) Pour broth or water over the artichokes, add herbs, then place lid in place.

4) Press steam mode and set timer for 10 minutes. After cook time, use quick release.

5) Remove artichokes from Instant Pot. Season with fresh herbs, salt and pepper if desired.

Whisk together all aioli ingredients in a bowl and let chill for 30 minutes before serving.
