INSTANT POT ARTICHOKES

INGREDIENTS: 3 small artichokes, 1 cup vegetable broth, lemon juice, herbs of choice.

Trim outer layer of artichoke by peeling off first layer of leaves. Cut off tip and stem. Rub tips with lemon juice.

INSTRUCTIONS:

Place artichokes upside down on wire trivet in Instant Pot. Pour water or broth over artichokes and add herbs if using.

Lock lid in place, closing vent. Select MANUAL mode and cook on HIGH for 10 minutes. Use quick release when cook time is up.
