CURRY CAULIFLOWER KALE SOUP

INGREDIENTS: Cauliflower florets, curry powder, garlic powder, cumin, paprika, kosher salt, light olive oil, onion, garlic, kale leaves, carrots, vegetable broth, canned coconut milk, red pepper flakes, black pepper

Preheat oven to 400°F. Toss cauliflower with curry powder, garlic powder, cumin, paprika, salt and olive oil. Roast for 20 minutes.

INSTRUCTIONS:

While cauliflower is cooling, chop the onion, kale and carrots. Place cooled cauliflower in food processor and pulse a few times.

In a large pot, add the onion, 1 Tablespoon oil, and minced garlic and saute for 5 minutes or until fragrant.

Stir in the broth, milk, carrots, kale, cauliflower rice, red pepper flakes and black pepper. Bring to a boil, then reduce to med-low and simmer for 20 minutes.
