CROCKPOT SWEET POTATO CHILI

INGREDIENTS: - SWEET POTATOES - GROUND PORK, BEEF, OR CHICKEN - WHITE ONION - BROTH - CANNED TOMATOES - RICED CAULIFLOWER - GARLIC - CHIPOTLES WITH ADOBO SAUCE - CUMIN - PAPRIKA - CHILI POWDER - SALT & PEPER

1) Peel and chop the sweet potatoes. Place in bowl with water and microwave for 3 minutes, or until tender. 2) In a skillet, cook the ground meat until cooked through.

3) Place all ingredients in a slow cooker. Stir together. 4) Cook on high for 3-4 hours.

For less spicy chili, replace the chipotle peppers with 1/2 cup of hot chipotle salsa.
