COCONUT ORANGE MUFFINS

GLUTEN-FREE & DAIRY FREE

INGREDIENTS: - gluten free oat flour - coconut flour - vanilla plant-based protein powder - baking soda - arrowroot starch - salt - monk fruit sweetener - fresh orange juice - egg - refined coconut oil - vanilla  - shredded coconut - orange slices for garnish

Combine the dry ingredients in a mixing bowl. In a separate bowl, whisk together the wet ingredients. 

HOW TO MAKE

Working in batches, combine the dry ingredients with the wet ingredients. Fold in the coconut shreds. Scoop batter into prepared muffin pan.

Sprinkle each muffin top with coconut and thinly sliced orange. Bake for 18-25 minutes.
