BLUEBERRY CARROT CAKE BARS

GLUTEN-FREE & VEGETARIAN

INGREDIENTS: - oat flour - almond flour - arrowroot flour - baking powder - salt - sugar - egg - non dairy milk - vanilla Greek yogurt or non dairy yogurt - vanilla - cinnamon - coconut oil - shredded carrot - blueberries

1) Sift the flours into a bowl, add the salt and baking powder. 2) In another bowl, mix together vanilla, yogurt, egg, and milk.

3) Combine the dry ingredients to the wet ingredients and stir. Add the cinnamon and coconut oil.  4) Fold in the carrots and blueberries. Pour into an 8x8 baking dish.

5) Bake for 30-35 minutes or until toothpick inserted into center comes out clean.  6) Let cool before adding the frosting (if using).

7) Evenly spread out 1/3 cup to 1/2 cup of vegan coconut frosting and sprinkle with crushed nuts, berries, or granola.
