This Month Jason is focusing on Spring/Summer time grilling recipes. Good thing because it’s already 85F here and turning on my oven is not fun. Grilling is a must! Those of you who still have snow, I’m sorry. Feel free to visit.
Grilling is also a must for a man (aka the husband) who is AMPING up his training. His next race is Captex on May 27th. This week’s training has been INSTENSE, and so is his appetite. We’ve gone through dozens of eggs, bacon, oatmeal, smoothies, pro bars, larabars, nuttzo sandwiches, turkey wraps, etc. Grilling anything and everything allow me to make more meats and veggies in advance, which I can later throw into an omelet, rice, wrap, salad, etc. What can I say, I’m scrappy like that!
Here’s my #endurance Foodie Recipe for the week. It’s A FAVORITE!

Grilled Balsamic Fennel and Trout.
Serves: 1-2
Ingredients
- 1 fennel bulb
- honey lime dressing or marinade
- balsamic vinegar
- apple cider vinegar
- olive oil
- garlic (minced)
- black pepper
- red pepper flakes
- Trout Fillets
- mini bell peppers
Instructions
- Cut your fennel bulb in half with the stem still attached. Then cut bulb into wedges. Take the stem and pull off leaves (seeds). Arrange the bulb pieces in a baking dish and lightly drizzle each of your vinegars and dressings over the wedges. I would say about 1-2 tablespoon of each. Then sprinkle your seasoning on top (about 1 teaspoon of each) along with the rest of your fennel leaves.
- Season your trout with a little olive oil, lemon juice, and black pepper, and onion (optional).
- Place everything in foil (bell pepper included) and seal up half way. Place on grill for about 15 minutes. The trout may grill faster, so check after 10 minutes.

Now for the food and beverage finds. I guess this could count as Food Finds meets WIAW, because we have consumed all these goodies today already. MEGA COTTER CRUNCH.
Honest Fizz– new line of stevia sweetened soda from Honest Tea. LOVE LOVE the Lemon Lime. Tastes like Sprite! I love this company and I love Seth’s story!
Raw Kombucha Soda– need I say more? Best of both words here. Especially on a hot summer day. Another local favorite.
New ALT Larabars. These are similar texture to the original larbars but have 10 grams pea protein in each bar. Same great flavor! I like the Lemon Pound Cake. They are currently at a few Whole Foods and hope to get into more throughout the nation soon.
And lastly, Pistachio Cranberry Chewy bites. These are like little prepackaged fruit and nut bars with only three ingredients; pistachio, agave nectar, and cranberries. 100% all natural, gluten and dairy free, low in sodium, GMO free, and vegan. Great to throw in your purse for on the go snacks. Best place to buy them is on Amazon.

you gotta try the Applegate farms pineapple chicken hot dogs!! SO GOOD!
I cannot wait to try those Stevia sweetened sodas! Hopefully I will like them as much (if not more!) than Zevia.

I like Honest Tea and I am a bubbly water/soda lover so I will have to check this out. I am working really hard to take in more protein as I seem to always be starving. I feel like I am on the hunt to find the perfect Protein Bar – think I’ve had a million brands this week alone. I’ll have to check the Lara ones out!

you would be so happy- I finally found a brand of Kombucha that I ADORE! like addicted to it- it’s a CDN company called Rise. Mint Chlorophyll is my fave with a lemongrass ginger as #2. Haven’t gotten the ALT bars yet here, but that will be nice to have something new to take on rides/training w/ me! new twists on old faves are always fab!

HOW is it mid-May – I agree!!! And that trout recipe looks AMAZING! I need to experiement with that fish, I haven’t cooked with it much (salmon is on the menu tonight tho – yum!). Those larabars look so tasty, as do the pistachio bites. yum yum YUM!
Yum! Everything looks delicious especially the Fennel and trout! I love roasted fennel but haven’t tried grilling it yet. Sounds good! My hubby tried some on of the ALT bars but I’m itching to give them a try. Although they don’t really fit into my Paleo eating style but a little splurge now and then is okay 🙂

Sad face! I checked out the ALT bars only to find that most of them have peanuts and none of them are available in Canada. But at least there’s always the option of your healthy bites <3
As for grilling, I'm kind of a noob when it comes to that cooking method, but I really, REALLY love grilled peaches. Warm off the grill with some vanilla bean ice cream? Heaven.

I like the Honest Tea sodas, but I think I like Zevia better; however, the only flavor I tried was the Dr. Fizz so maybe it’s just the flavor! Larabars know the right flavors to make to attract a crowd… Pumpkin pie and peanut butter cookie <3 YUM.

Thanks for the trout recipe, I rarely see fennel in recipes anymore, maybe I’m not looking hard enough? But, I love that stuff. It’s one of those foods I only recently tried and wish I would have tried it years ago!

I don’t know that I can narrow it down to one favorite, but my top three are salmon, asparagus and sweet potatoes! Oh–and grilled pineapple is pretty amazing!!
I am having a hard time coming up with a better spice/herb than fennel. I put it on anything that would remind me of pork and as a person who doesn’t eat meat/fish that taste is all that I need.
