I can’t believe it’s already been two weeks since we arrived. Crazy to think how fast this journey is going to whiz by. That being said, I’m taking my time to stop and notice the little things. Things that make me happy to embrace change, culture, etc. Things that help me realize how simple and enjoyable life can be. Things that make understand why my husband longed to come home for some time.
I’ve noticed my mornings are never rushed…
And that I rarely order a to-go cup anymore…
I’ve noticed that rain or shine, young or old, big or small, people are always biking around town.
I’ve noticed that no matter where you run/walk, you are always within a 10 foot radius of a rose bush.
I’ve noticed that marmite and vegemite flow like milk and honey here….
I’ve noticed that no matter what café, bakery, or restaurant you go to, their will always be a GLUTEN FREE option. My HEAVEN!
I’ve noticed that healthy bites are fitting in quite nicely with my cuppa tea.
PB & Jelly Protein Bites
What I’m Noticing Wednesday
- around 5oz. pitted dates
- 35 grams pecan halves (around 1.25 oz)
- 1 serving vanilla whey
- 1 heaping tbsp Peanut Butter
- 1/2 to 1 tbsp creamed honey
- cinnamon (optional)
- Grind the dates by themselves in a blender or food processor. Then throw into a larger mixing bowl. Add in your other ingredients with the honey mixing in last. I mix with spoon first and then use my hands. Roll into small bites and place in freezer to maintain freshness.

What simple things have you been noticing lately in your home town?
I’ve got a whole post dedicated to the Christchurch earthquake and how the city is restoring itself. I’m hoping to share before Christmas. It’s pretty amazing!
