VEGAN CONDENSED MILK

SUGAR FREE OPTION!

INGREDIENTS: - full-fat canned coconut milk - agave nectar or powdered sugar substitute (monk fruit or swerve) - vanilla extract - sea salt - xanthan gum (for sugar-free version)

Combine the coconut milk, sugar, vanilla and salt in small saucepan over medium-high heat. Whisk to combine and bring to a boil.

INSTRUCTIONS:

Reduce heat to low and simmer for 30-35 minutes stirring every 5-10 minutes. It will thicken once cooled.

SUGAR-FREE OPTION: Omit the agave nectar. After 30 minutes simmer is done, remove from heat. Quickly whisk in 1/4 teaspoon xanthan gum and then let it cool.

Store in fridge, covered, for up to 3 weeks.
