THREE HERB TOMATO ZUCCHINI SALAD

GLUTEN-FREE & VEGAN

INGREDIENTS: + cherry tomatoes + zucchini + shallot + fresh herbs + evoo + sumac + smoked paprika + garlic + sea salt & pepper + lemon juice

1) Wash and slice the tomatoes and zucchini. 2) Slice the shallot and soak in lemon juice. 3) Chop the herbs and add to the bowl.

HOW TO MAKE

4) Combine the olive oil, sumac, paprika, garlic, salt, pepper, and lemon juice to a bowl. Whisk. 5) Pour over the tomato and zucchini mixture.

6) Add the soaked shallots, and toss into the salad. Garnish with extra lemon slices.

Serve this salad right away, or keep chilled until ready to serve.
