Add in the egg and vanilla and mix on medium speed. In a medium-sized bowl, whisk together the flour, baking powder, baking soda, salt, and optional cinnamon.
Add the dry mix to the wet ingredients and mix until the batter is smooth. Don’t overmix. Fold in the chocolate chips until combined. Again do not overmix.
Shape the dough into a ball, place in a bowl and cover with plastic wrap. Place in the fridge to chill for 45 minutes to 1 hour. Preheat the oven to 350 degrees F.
Scoop cookie dough into balls and place on the prepared baking sheet. Bake for 10-12 minutes or until the edges are slightly golden brown.
