GLUTEN-FREE & PALEO

INGREDIENTS: - blanched fine almond flour - arrowroot flour - baking soda - baking powder - salt - cinnamon - butter or refined coconut oil - coconut sugar - vanilla - egg - sparkling cane sugar

1) In a bowl, sift almond flour, arrowroot flour, baking soda, baking powder, salt, and cinnamon. Set aside. 2) Combine butter, sugar, and vanilla. Beat on medium speed until creamy.

3) Add the egg, beat into dough. Work in batches, add almond flour mixture to wet ingredients and mix until a dough forms. 4) Chill for 1 hour. Then scoop dough out, roll into balls, roll in sparkling sugar.

5) Place dough balls on baking sheet. Bake at 350 degrees for 12-15 minutes.  6) Remove from the oven, let cool for 15 minutes on pan before transferring to cooling rack.

If you would like to prep the cookie dough ahead of time, the dough can be chilled overnight and the cookies baked the next day.
