STRAWBERRY SALMON SALAD

GLUTEN-FREE & LOW CARB

INGREDIENTS: For the Salmon - fresh salmon - olive oil to drizzle - kosher salt & pepper

INGREDIENTS: For the Dressing - plain yogurt/Greek yogurt - lemon juice - raw honey - Dijon mustard - kosher salt & pepper

INGREDIENTS: For the Salad - sliced strawberries - cucumber and/or celery - avocado - fresh parsley or basil - optional:   - arugula   - salt, pepper, lemon juice

Preheat over to 400 F. Drizzle olive oil, salt, and pepper over salmon. Bake for 10-14 minutes or until internal temp reaches 145F.

Flake the salmon and discard the skin. Place all salad ingredients into a bowl with the salmon and gently mix together.

In a small bowl mix together all dressing ingredients and then pour over the salad ingredients.
