Preheat oven to 325 degrees F. Line a baking sheet with parchment paper and set aside.
Place all ingredients (except coconut) in a mixing bowl, stir to combine. Spread mixture evenly onto prepared baking sheet.
Bake for 20 minutes. Remove pan from oven, add the coconut, stir. Spread granola evenly onto baking sheet and bake for additional 5-7 minutes.
Remove pan from oven, let granola cool on baking sheet. Once cooled, break granola into smaller pieces. Place in airtight container or serve.
