Let the mixture sit at room temperature for 15-20 minutes. Preheat broiled or oven to 450°F.
Using oven mitts, carefully remove the skillet from the oven. Turn the oven to 425 degrees F. Coat bottom of pan with olive oil. Pour batter into skillet. Bake for 5-8 minutes.
