SOCCA PIZZA

INGREDIENTS: - chickpea flour - olive oil - warm water - kosher salt - pepper - garlic powder - dried herbs

In a bowl, whisk together the chickpea flour, 2 tablespoons olive oil, water, salt, pepper, garlic powder and dried herbs.

INSTRUCTIONS:

Let the mixture sit at room temperature for 15-20 minutes. Preheat broiled or oven to 450°F.

Using oven mitts, carefully remove the skillet from the oven. Turn the oven to 425 degrees F. Coat bottom of pan with olive oil. Pour batter into skillet.  Bake for 5-8 minutes.

Remove from oven. Top with pizza sauce and toppings of choice.  - Pizza sauce - Fresh cut veggies - Non-dairy shredded cheese

Return to the oven for 10-15 minutes or until cheese has melted and socca crust is crisp.

Top with optional fresh herbs, salt, and pepper. Let cool for 2-3 minutes before serving.
