INGREDIENTS: - paleo mayo or red pepper hummus - olive oil - minced garlic - paprika - salt/pepper to taste - cayenne - onion powder
1) Spiralize the washed zucchini. Pat dry with a paper towel to remove excess water from noodle strands.
2) Prep/chop the other veggies and mix with the noodles. Add the squeeze of lemon juice, salt & pepper.
3) Whisk together the cajun sauce ingredients 4) Toss the sauce with the zucchini noodles and veggies. Add the smoked salmon and serve.
This smoked salmon zucchini salad is easy to prep, is a no-cook meal, and makes for a nutrient-packed dinner for any night of the week!

If you don't have mayo on hand, feel free to swap in hummus! Still tastes great and gives extra nutrients!
