Prepare the vegetables by chopping/dicing to desired salsa thickness. Place in bowl.
Mix in the chopped cilantro and lime juice. Mix together. Add salt & pepper to taste.
Place in fridge and allow to chill for at least 30 minutes. Stays fresh (covered) in fridge for up to 4 days.
