OVEN BAKED FISH with Potatoes

Gluten Free | Dairy Free

INGREDIENTS: For the Pan - White fish filets, baby potatoes, vegetables, onion, melted butter or olive oil, lemon juice, garlic powder, sea salt & pepper, fresh parsley

INGREDIENTS: For the Mustard Sauce -  Dijon mustard, olive oil, honey, apple cider vinegar, lemon juice, sea salt, black pepper, chopped fresh dill (optional)

Preheat oven to 400°F. In a small bowl, whisk together the sauce ingredients until smooth.

INSTRUCTIONS:

Place fish on plate and generously brush sauce on each side of fish. Set aside. In large bowl, toss potatoes, vegetables, and onion in butter/oil , lemon juice, garlic powder, salt & pepper.

Spread coated vegetables in large oven-safe pan or baking sheet. Bake for 14 minutes.

Remove from oven, flip vegetables, arrange prepared fish filets in pan and bake for 10-14 minutes or until the fish has reached internal temperature of 135-145°F.

Top fish with lemon slices and season with. black pepper and fresh parsley, if desired.
