Add oil to a skillet and heat. Add onion and garlic cook on medium-high for 5 minutes. Set aside. Whisk together milk, eggs, Parmesan cheese.
Sift together the dry ingredients and add to the milk/egg mixture. Layer the onions and garlic in bottom of pan. Add zucchini, peppers, and feta on top.
Pour the milk/egg mixture over the top. Lastly layer rest of zucchini slices and cheese on top. Bake for 35-40 minutes.
The edges will be crispy brown and toothpick inserted into center of quiche will come out clean. Remove when done baking.
