MASSAGED KALE SALAD with BLUEBERRIES

INGREDIENTS: + kale + olive oil + sea salt + lemon juice + blueberries + crumbled feta cheese + pine nuts + chopped spring veggies + balsamic vinegar + black pepper 

1) Strip the washed kale leaves from the stems, and chop them into small pieces. 2) Place chopped leaves into a large bowl with olive oil, sea salt, and lemon juice.

3)  Using two hands, massage the kale until it is soft and tender. About 2 minutes.
