1) Blend the first 11 ingredients together in blender or food processor. Reserve 1/4 cup marinade in small bowl.
2) Wash the chicken, pat dry, and place in ziplock bag. Pour the remainder of marinade over chicken. Seal the bag and place in fridge for 1-24 hours.
3) Remove marinated chicken from fridge. Preheat oven to 425 or grill at medium high. 4) Place chicken in baking dish and add reserved marinade over top of cihicken.
5) Bake for 25-30 minutes or until internal temperature is 165 degrees. Broil for the last minute to caramelize marinade. 6) If grilling, place chicken breast on foil and grill for about 20 minutes or until internal temperature is reached.
To serve, place rice or cauliflower rice in bottom of bowl, top with sliced mango chile chicken, and top with garnish of choice (cilantro, lime wedge, or crushed pepper)
