Press the Sauté mode on Instant Pot and add oil, onion, garlic, bell pepper, and celery Sauté for 5 minutes.
Add the spices, stir then sauté for 1 minute. Add the remaining ingredients (minus salt & pepper).
Place lid on Instant Pot and cook on high for 12 minutes. Natural release for 20 minutes, then quick release.
After cooking, add salt & pepper to taste. Stir in a slurry (if using) and keep on warm for 10 minutes until gumbo has thickened.
Serve in bowls topped with red pepper flakes, jalapeños, and fresh cilantro. Makes for the perfect easy weeknight meal.
