INSTANT POT GUMBO

GLUTEN-FREE & VEGETARIAN

INGREDIENTS: - olive oil - garlic - red bell pepper - onion - celery - fresh thyme - fresh oregano - Cajun mix spice - cayenne - lentils - vegetable broth - okra - diced tomatoes - apple cider vinegar - tomato sauce - cauliflower - salt & pepper _ jalapeño 

Press the Sauté mode on Instant Pot and add oil, onion, garlic, bell pepper, and celery  Sauté for 5 minutes.

HOW TO MAKE

Add the spices, stir then sauté for 1 minute. Add the remaining ingredients (minus salt & pepper).

Place lid on Instant Pot and cook  on high for 12 minutes. Natural release for 20 minutes, then quick release.

After cooking, add salt & pepper to taste. Stir in a slurry (if using) and keep on warm for 10 minutes until gumbo has thickened.

Serve in bowls topped with red pepper flakes, jalapeños, and fresh cilantro. Makes for the perfect easy weeknight meal.
