In large bowl whisk dry ingredients. Using dough paddle, add cold butter, mix until mealy flour is formed.
Add the milk, honey, and vanilla. Mix until combined. Form into soft ball. Wrap in plastic wrap, chill for 1-2 hours.
Place chilled dough on floured surface, roll out to 1/8-inch thick
Place dough onto baking sheet, cut into 3-inch by 3-inch squares. Using a fork, prick crackers, sprinkle with extra sugar if desired.
Bake for 7 minutes, rotate pan bake another 7 minutes. They'll be crunchy for 2 days! Perfect for s'more building!
