HEALTHY  OATMEAL COOKIES

INGREDIENTS: Gluten free 1-1 flour, baking soda, cinnamon, nutmeg, salt, butter or coconut oil, sugar or sugar substitute, coconut sugar, vanilla extract, egg or flax egg, gf rolled oats, dried cranberries, dark chocolate chips

Preheat the oven to 350 F.  Line a large baking sheet with parchment paper and set aside. In a medium mixing bowl, whisk together the flour, baking soda, cinnamon, nutmeg and salt.

In a separate small bowl, whisk together melted butter or coconut oil, raw sugar, coconut sugar and vanilla until combined. Add the egg and quickly whisk again until creamy.

Pour the wet ingredients into the dry ingredients and mix until combined. Fold in the oats, dried cranberries, and chocolate chips. Chill the dough in the fridge for 15-20 minutes.

Using a medium-sized cookie scoop, drop the cookies on the prepared baking sheet. Bake in the preheated oven on the center rack for 10-12 minutes.
