GLUTEN FREE BREAKFAST STRATA

Dairy Free Option

INGREDIENTS: Gluten free bread/rolls, bacon or ham, garlic, onion, spinach salt, optional sun dried tomatoes, shredded cheese, eggs, heavy cream (half & half or coconut milk), black pepper, dried mustard, paprika, dried oregano or thyme 

Preheat the oven to 350 F. Spray a casserole dish with nonstick cooking spray. Tear the bread into smaller pieces and spread the pieces evenly on the bottom of the casserole dish.

INSTRUCTIONS:

Cook the bacon and cut into bite-sized pieces and place on top of the bread in the casserole dish. If using smoked ham, no need to cook prior to layering. In the same pan, add the garlic and onion.

Saute for 2 to 3 minutes. Add the chopped spinach to the pan and sprinkle with salt. Continue to sauté until the spinach is wilted. Evenly arrange the spinach, garlic, onion, and optional sun dried tomatoes over the bread.

Sprinkle with the shredded cheese. In a large mixing bowl, whisk together the egg mixture. Pour evenly over bread and vegetables. Refrigerate the casserole dish for 30 minutes to 24 hours.

Preheat the oven to 350 F. Bake uncovered for 30 minutes. Loosely cover and bake for an additional 20 to 30 minutes or until the casserole is golden, puffed and set in the center.
