INGREDIENTS: Non-dairy milk, quick-rise yeast, sugar, gluten free all-purpose flour, xanthan gum, baking powder, kosher salt, butter or coconut oil, egg, apple cider vinegar

Proof the yeast. In a glass measuring cup, heat the milk to 110°F, mix in yeast and sugar. Set aside for 10 minutes.

In stand mixer, whisk flour, xanthan gum, baking powder, salt and sugar. Gently add the proofed yeast mixture, melted butter, egg and vinegar.

Change whisk attachment to dough hook, mix on medium speed for 2-3 minutes. Batter will be sticky.

Scoop dough into 7-8 mounds, place in well greased pan. Cover with towel and let dough rise in warm place for 45 minutes.
