+ dark chocolate chips + melted dark chocolate to coat
+ shredded carrots + pitted chopped dates + nuts + melted white chocolate to coat (use dairy-free white chocolate if needed)
+ basic cake ball batter + melted dark chocolate + melted white chocolate
Once boxed cupcakes are baked and cooled, break cupcakes into small crumbles. Add rest of cake batter ingredients.
Mix together with a spatula. If using add-ins, add to the batter and fold into batter. Using two hands, roll batter into 1-1 1/2-inch balls. Place on a lined baking sheet.
Place the cake balls in the freezer to chill. Remove from freezer and coat with melted chocolate(s). Drizzling additional on top if needed.
