FLOURLESS CHOCOLATE CHIP PROTEIN MUFFINS

INGREDIENTS: + rolled oats/gluten-free oat flour + vanilla or chocolate vegan protein powder + salt + baking powder + baking soda + eggs + non dairy milk + vanilla + honey or maple syrup + creamy nut butter + dairy-free chocolate chips

To make Gluten Free Chocolate Chip Protein Muffins, first add the rolled oats to a blender and blend into a fine flour.

Add the protein powder, baking powder, baking soda, and salt; blend again. Pour into a mixing bowl. In a separate mixing bowl whisk the wet ingredients.

Slowly combine the ingredients, adding a little wet ingredient mixture with a small amount of dry, stir, then repeat until all batter is combined.

Fold in the chocolate chips. Transfer the batter into a muffin tin, evenly filling the cavities 2/3 full. Bake for 18-22 minutes. Let cool before serving.

For a nut-free option, use sunflower seed butter in place of the nut-butter. Use certified gluten-free oats for gluten-free!
