To a preheated cast iron skillet, coat with olive oil and pour in chickpea flatbread batter. Cook for 5-8 minutes. Flip skillet over to remove crust.
Place flatbread socca pizza crust on baking sheet. Spread with pizza toppings of choice starting with pizza sauce.
Add sliced vegetables, fresh herbs, and non-dairy shredded cheese of choice. Place back in the oven for 10-15 minutes or until cheese has melted.
