INGREDIENTS: - chilled canned coconut milk - espresso shot or Instant Espresso Powder mixed with hot water - pure maple syrup - coconut milk - amaretto (optional)

Place the can of coconut milk in fridge for 12-24 hours to harden. Remove the thickened coconut milk and place in stand mixer (or bowl).

INSTRUCTIONS:

Place stand mixer (or handheld mixer) on high and whip coconut cream until light and fluffy.

Make the shot of espresso (with espresso machine or with instant espresso powder + hot water). Stir in maple syrup and amaretto if using.

Pour espresso into a mug, top with coconut whipped cream. For an extra touch, sprinkle with coconut sugar and espresso powder.
