Reduce the heat to low and simmer, stirring occasionally, for 20-30 minutes or until the glaze thickens into a syrup-like consistency.
Preheat the oven to 400 F. Peel and clean the carrots. Then cut off the tops. Place whole carrots in a 9×13 baking dish and drizzle with oil. Toss until carrots are completely covered.
Brush maple bourbon glaze over the carrots until well coated. Season the carrots with salt and black pepper. Place in the oven for 20 minutes.
Remove, turn and brush with glaze from the pan. Return to the oven for 15 to 20 minutes or until tender. For softer carrots, bake for an additional 5 minutes. Serve warm.
