1) Grind the oats in food processor. 2) Add almond flour, protein powder, cinnamon, and nut butter. Pulse in food processor until dough forms.
3) Add the maple syrup and vanilla. Pulse again or transfer all batter to a mixing bowl, then mix with your hands.
4) Scoop out a small amount of dough and roll between hands to form a round bite. Should be 1-1 1/2-inch ball. Place on parchment-covered tray.
5) Continue to roll until all dough is formed, will make 16-18 bites. Place in the freezer for 20-30 minutes to set.
