CINNAMON CHICKPEA BLONDIES

INGREDIENTS: Canned chickpeas (garbanzo beans), nut butter, maple syrup, sugar, oat flour, salt, baking powder, baking soda, cinnamon, vanilla extract, white chocolate chips

Preheat oven to 350 degrees, and line an 8×8 pan with parchment paper. Set aside.

Drain can of chickpeas, and rinse them well under cold water to remove residue.

Add chickpeas, nut butter and maple syrup to the bowl of food processor.  Process until batter is completely smooth.

Sift together the sugar, oat flour, baking soda, baking powder, cinnamon and salt. Add the chickpea mixture, flour mixture, vanilla extract and chocolate chips.

INSTRUCTIONS:

Transfer batter to the baking pan and spread the batter out evenly. Sprinkle with sea salt and extra cinnamon on top. Bake 25 min.
