CHIPOTLE PEACH SALSA

INGREDIENTS: Peaches, red onion, cherry tomatoes, chipotles in adobo sauce, honey or maple syrup, salt, cilantro, lime juice Serve with chips or on fish, chicken, pork, or shrimp tacos! 

Place the peaches, onion and tomatoes into a large non-reactive bowl (glass or stainless steel).

INSTRUCTIONS:

Stir in one diced chipotle pepper, a smidge of adobo sauce, honey, salt, chopped cilantro and a splash of lime juice.

Add additional salt and pepper, to taste.

Place salsa in the refrigerator and allow it to chill for at least 30 minutes to 12 hours before serving.
