Place chicken thighs in bowl and let marinade in fridge for 30 minutes. Prep the potatoes and carrots and preheat the oven to 375°F.
Place marinated chicken on sheet pan with potatoes and carrots. Bake for 25-30 minutes of until chicken reaches internal temperature of 165°F.
Remove from oven, plate the chicken and let rest for 5 minutes. Return potatoes and carrots to oven (increase temp to 400°F) for 5-10 minutes for crispier version.
