CAULIFLOWER FRIED RICE

HOMEMADE SAUCE: Toasted sesame oil, coconut aminos, apple cider vinegar, oyster sauce, fresh ginger, minced garlic, arrowroot starch, red pepper flakes, honey.

FOR THE PAN: Cauliflower rice, kosher salt, gluten free soy sauce, toasted sesame oil, yellow onion, frozen mixed vegetables, eggs, scallions, red pepper flakes.

In a bowl, add the cauliflower rice, salt, tamari sauce, sesame oil ,and onion. Mix well, spread evenly on baking sheet and bake for 10 minutes.

INSTRUCTIONS:

Remove sheet pan from oven, toss cauliflower and add the frozen mixed vegetables. Spread evenly.

Crack 4-5 eggs on top of vegetables. Return to oven for 10-12 minutes or until whites of eggs are set.

Drizzle 2-3 tablespoons of sauce on top and toss to combine the "fried rice" or leave eggs whole.

Top fried rice with scallions and red pepper flakes. Season to taste and add more sauce, if desired.
