Remove sheet pan from oven, toss cauliflower and add the frozen mixed vegetables. Spread evenly.
Crack 4-5 eggs on top of vegetables. Return to oven for 10-12 minutes or until whites of eggs are set.
Drizzle 2-3 tablespoons of sauce on top and toss to combine the "fried rice" or leave eggs whole.
