INGREDIENTS: For the Marinade -  fresh cranberries extra virgin olive oil maple syrup balsamic vinegar minced garlic kosher salt black pepper

INGREDIENTS: For the Cranberry Chicken - skin-on chicken thighs fresh cranberries maple syrup balsamic vinegar fresh thyme leaves

Add the marinade ingredients to a food processor bowl and blend until smooth.

HOW TO MAKE

Pour the marinade into a ziplock bag and add the chicken thighs. Coat evenly, place in fridge for marinate for 30 minutes (or up to 24 hours).

Place chicken thighs in a 9x9 baking dish or oven-safe skillet, skin-side down. Add fresh cranberries over top. Bake uncovered for 25-30 minutes.

Remove from oven, turn chicken to skin-side up. Brush with maple syrup/balsamic vinegar. Bake until internal temperature reaches 165 degrees. May broil for 2-3 minutes for crispy skin.
