AFRICAN PEANUT STEW

GLUTEN-FREE & VEGETARIAN

INGREDIENTS: + tomato sauce + creamy peanut butter + smoked paprika + coriander + cayenne pepper + sea salt & pepper + stew meat (optional) + broth + onion + garlic + ginger + sweet potatoes + carrots + spinach leaves

1) Make the sauce: add all sauce ingredients to a blender and combine. Or whisk together.  Set aside.

HOW TO MAKE

2) If using stew meat, brown in a skillet before adding additional ingredients. 3) Add the oil to skillet, once hot add the onions. Sauté for 3-4 minutes.

4) Add the tomato sauce, peanut butter, spices, spinach, and broth. Stir to combine. Simmer and cover for 1 hour.

For Instant Pot: On sauté mode add oil, onion and garlic and cook for 2 minutes. (If using stew meat, cook meat first).

Add the remaining ingredients and sauce, then stir to combine. Pressure cook on high for 20 minutes, allow natural release.
