4-INGREDIENT LOW CARB PANCAKES

GLUTEN-FREE & VEGETARIAN

INGREDIENTS: - creamy peanut butter - eggs - baking powder - flax meal or psyllium powder TOPPINGS/MIX-INS: - chia seeds - dark chocolate chips - fruit - nuts

1) Place all ingredients in large bowl. Use an immersion blender or hand blender and blend ingredients for 1 minute. 

HOW TO MAKE

2) Add 1/2 tablespoon butter or oil to a pan. Heat over medium heat until butter is very hot but not smoking.  3) Pour 1/4-1/3 cup batter onto pan. Cook until edges start to brown and bubbles form in the middle of batter.

4) Flip the pancakes over. Cook until it has browned and cooked through. Remove from pan 5) Repeat until all batter is used up.

6) Serve pancakes hot, topped with your favorite toppings and maple syrup. 7) Will make 5-6 medium-sized pancakes.
